Cracked Pepper and Flax Cheeseballs

Quick and easy appetizer.

Ingredients:

  • 8 oz. (250 g) light cream cheese 
  • 1 tsp (5 mL) cracked black pepper or coarsely ground pepper 
  • 1 tsp (5 mL) salt free herb and spice seasoning 
  • 2 Tbsp (30 mL) whole flaxseed 
8 oz. light cream cheese 1 tsp  cracked black pepper or coarsely ground pepper 1 tsp  salt free herb and spice seasoning 2 Tbsp  whole flaxseed 

Instructions:

  1. In a medium-sized bowl, mix together cream cheese, pepper and seasoning with a fork until blended. Divide into two balls.
  2. In a small bowl, combine 1 Tbsp (15 mL) flaxseed, put in one cheeseball, turning to coat all sides with seeds. Repeat with other ball.
  3. Wrap with plastic wrap, refrigerate two hours. Serve with crackers and vegetables.

Yield: 2 cheeseballs (1 cup/250 mL each or 50 servings each)

Serving Size:  1 tsp (5 mL) per cracker. Each serving contains 1/8 tsp (0.5 mL) of flax.
