Frozen Banana on a Stick

Refreshing summer snack
Ingredients:
- 2 large bananas or 4 small bananas
- 1/3 cup (75 mL) any flavored yogurt
- 1/3 cup (75 mL) ground flaxseed
- 4 popsicle stick
- Finely chopped toasted nuts, shredded coconut, chocolate chips, etc.

Instructions:
- Line a 12 x 8 inch (30 x 20 cm) baking pan with wax paper.
- Sprinkle 1 Tbsp (15 mL) of the ground flaxseed on bottom of pan.
- Peel bananas, cut in half crosswise, leave small bananas whole. Push popsicle stick lengthwise two thirds of the way into the bananas. Spoon yogurt over bananas to entirely cover. Let excess drip back into container.
- Holding popsicle stick at a 45 degree angle, place tip of banana in prepared pan. Sprinkle 1 Tbsp (15 mL) of ground flaxseed over each banana, coating all sides. Lay banana flat in pan. Sprinkle with nuts etc.
- Place pan in freezer until frozen. Bananas can be individually wrapped once frozen. Let stand at room temperature a few minutes before eating.
Yield: 4 servings
Serving Size: 1 banana stick. Each serving contains 1 Tbsp (15 mL) of flax.
