Flax Almond Cookies

This is a gluten free cookie recipe.

Ingredients:

  • 1/2 cup (125 mL) butter, softened
  • 1/2 cup (125 mL) packed brown sugar
  • 1 tsp (5 mL) vanilla extract
  • 1 tsp (5 mL) almond extract
  • 1 egg
  • 3/4 cup (175 mL) white rice flour
  • 1/2 cup (125 mL) ground flaxseed
  • 1 1/2 cups (375 mL) gluten-free rice crisp cereal

Instructions:

  1. In a bowl, cream butter and sugar with electric mixer until fluffy. Add vanilla, almond extract and egg; beat well. Gradually beat in flour and flaxseed. Fold in rice crisp cereal until evenly distributed.
  2. Cover dough and place in refrigerator for 1/2 hour.
  3. Preheat oven to 350°F (180°C).
  4. Divide dough into 1 Tbsp (15 mL) rounded balls. Place on a nonstick cookie sheet 2 inches (5 cm) apart. Bake 10 to 12 minutes.  Remove from oven.  Cool on a rack for 5 minutes. Store in an airtight container.

Yield:  30 cookies.

Serving Size:  1 cookie. Each serving contains 3/4 tsp (4 mL) of flax.
