Flax and Sweet Potato Orange Smoothie Bowl

This smoothie blends sweet potato, ground flaxseed, carrot juice and ginger for a delicious and nutritious breakfast or snack!

Ingredients

  • 1 cup (250 mL) grilled or roasted sweet potato
  • 1/4 cup (60 mL) carrot juice
  • 1/2 tsp (2 mL) fresh ginger, grated
  • 1 tsp (5 mL) vanilla extract
  • 2 Tbsp (30 mL) ground flaxseed
  • 1 1/4 cup (310 mL) 1 % milk

Toppings :

  • 2 dates, chopped
  • 2 Tbsp (30 mL) coconut
  • 2 Tbsp (30 mL) pecans, chopped
  • 2 Tbsp (30 mL) ground flaxseed

Instructions

  1. In a blender, combine sweet potato, carrot juice, ginger, vanilla, ground flaxseed and milk. Cover and blend until smooth.
  2. Pour smoothie into two bowls and top with dates, coconut, pecans and ground flaxeed. Serve and enjoy!
