Flax Almond Cookies

This is a gluten free cookie recipe.
Ingredients:
- 1/2 cup (125 mL) butter, softened
- 1/2 cup (125 mL) packed brown sugar
- 1 tsp (5 mL) vanilla extract
- 1 tsp (5 mL) almond extract
- 1 egg
- 3/4 cup (175 mL) white rice flour
- 1/2 cup (125 mL) ground flaxseed
- 1 1/2 cups (375 mL) gluten-free rice crisp cereal

Instructions:
- In a bowl, cream butter and sugar with electric mixer until fluffy. Add vanilla, almond extract and egg; beat well. Gradually beat in flour and flaxseed. Fold in rice crisp cereal until evenly distributed.
- Cover dough and place in refrigerator for 1/2 hour.
- Preheat oven to 350°F (180°C).
- Divide dough into 1 Tbsp (15 mL) rounded balls. Place on a nonstick cookie sheet 2 inches (5 cm) apart. Bake 10 to 12 minutes. Remove from oven. Cool on a rack for 5 minutes. Store in an airtight container.
Yield: 30 cookies.
Serving Size: 1 cookie. Each serving contains 3/4 tsp (4 mL) of flax.
