Flax and Sweet Potato Orange Smoothie

This smoothie blends sweet potato, ground flaxseed, carrot juice and ginger for a delicious and nutritious breakfast or snack!
Ingredients:
- 1 cup (250 mL) grilled or roasted sweet potato
- 1/4 cup (60 mL) carrot juice
- 1/2 tsp (2 mL) fresh ginger, grated
- 1 tsp (5 mL) vanilla extract
- 2 Tbsp (30 mL) ground flaxseed
- 1 1/4 cup (310 mL) 1 % milk
- Toppings :
- 2 dates, chopped
- 2 Tbsp (30 mL) coconut
- 2 Tbsp (30 mL) pecans, chopped
- 2 Tbsp (30 mL) ground flaxseed
1 cup grilled or roasted sweet potato1/4 cup carrot juice1/2 tsp fresh ginger, grated1 tsp vanilla extract2 Tbsp ground flaxseed1 1/4 cup 1 % milk Toppings :2 dates, chopped2 Tbsp coconut2 Tbsp pecans, chopped2 Tbsp ground flaxseed
Instructions:
- In a blender, combine sweet potato, carrot juice, ginger, vanilla, ground flaxseed and milk. Cover and blend until smooth.
- Pour smoothie into two bowls and top with dates, coconut, pecans and ground flaxeed. Serve and enjoy!
- Serving: 2 smoothie bowls.
- Serving size: 1 1/3 cup (325 mL) smoothie plus toppings. Each serving contains 2 Tbsp (30 mL) of flax.
